Dark Matter is no ordinary spiced cane spirit—it’s Scotland’s first, crafted in a dedicated distillery in Banchory by rum enthusiasts Jim and John Ewan and Cory Mason. Made from exceptionally pure refiner’s grade molasses, it avoids the syrupy shortcuts common in the category. After distillation, fresh spices infuse for a full week, including ginger, green peppercorns, hand-crushed allspice, and Indian long pepper—noticeably without vanilla. A touch of molasses is added back for balance, resulting in a bold, intensely spiced spirit with remarkable texture and depth, free from artificial colouring.
